Story of the wine:
The wines produced from the vineyards surrounding the Etna volcano are the new, re-discovered wines of the last decade. In the 1990s Etna was on its death bed with just a handful of producers. Then in the 2000s the region and the local grape varieties were recognised as being capable of making great wines. Whilst most of the recognition has been for the Rosso, the Bianco is clearly just as good. The vineyards are all in local districts called Contrada, each of which has different characteristics to bring to its wines. Cottanera was founded in the 1990s by Guglielmo Cambria together with his brother Enzo and is now recognised as being one of the key wineries that sparked the Etna revival. The Carricante grape is grown almost entirely in Sicily and mainly in the Etna area. It is typified by its good levels of acidity ensuring the freshness of the wine.

Vinification: After a soft pressing and a 24 hour cold maceration it is fermented using local yeasts at 160C for 20-25 days in stainless steel vats. There is no malolactic fermentation.

Descriptions for Wine List
1) Great body, with the right level of acidity, to give a fresh, long-lasting sensation. Various scents can be appreciated, ranging from fresh citrus fruits to slight vegetal aromas, including some mineral, flint-like notes which, once poured, give it a distinguished character.
2) A straw yellow wine with golden highlights. Balanced and smooth with intense hints of fresh citrus and a delicate notes of mineral.

Etna itself flows in the lymph of the Cottanera vineyards. The vineyards grow over lava stone, 700 mts above the sea, on the northern slope of the volcano. The company is in Castiglione di Sicilia, near Catania. The name of the company comes from an ancient village that runs alongside the family vineyards, along the banks of the river Alcantara. Cottanera is led by the brother Enzo, and the children of the co-founder: Mariangela, Francesco and Emanuele.
