Story of the wine:
Dolcetto, literally “small, sweet one”, is a bit of a Piemontese secret, not surprisingly as it is the wine drunk by the region’s winemakers. Wine from Dogliani was first recorded in the 14th century, although we cannot be sure that it was a Dolcetto variety. However, the grape has certainly made its home in the Dogliani area which is regarded as producing some of the finest
examples of this wine and dominates the best sites and exposures. Dogliani has long been acknowledged as the best area for Piemonte’s Dolcetto and has recently been given its own DOCG in 2011. The Chionetti estate was founded in 1912. They started to bottle their wine from the 1970s and are now regarded as one of the best producers of Dolcetto in the region.

Vinification: There is a 15 day fermention at 25-280C in stainless steel vats. A maceration of 12-15 days and a complete malolactic fermentation in stainless steel vats.
Ageing: Aged for 10 months in stainless steel vats.

A true pioneer for quality in the area of Dogliani, Quinto Chionetti concentrates on the "terroir". The winery was founded in 1912 by the grandfather of the current owner. The estate has 15 hectares of vineyards, where every single operation is done by hand and the yields are kept very low to allow the production of authentic Dolcettos.
