Story of the Wine:
Grillo is an indigenous Sicilian variety, from a natural crossing of Catarrato Bianco and Musct of Alexandria. At one time the mainstay of Marsala it has now given way to higher yielding varieties for that wine. Since 2000 it has been recognised as producing wines of excellent quality and there has been a significant increase in plantings. Canicatti is a small co-operative near Agrigento on the south coast and Tonino Guzzo its consultant winemaker has been chosen in Decanter magazine as one of Italy’s up and coming winemakers and is making wines of outstanding quality
Aquilae refers to the eagles which can often be seen in the area.
Grape(s): 100% Grillo
Area: From vineyards around the town of Canicatti in southern Sicily.
Training System: Espadrella
Harvest: Late September
Vinification: A criomaceration for several hours is followed by a cool fermentation at 120-160C for 20-30 days in cement vats. There is partial malolactic fermentation.
Ageing: Kept for 3 months in stainless steel vats.

This recently modernised co-operative has its vineyards in the south of Sicily around the town of Agrigento. This is regarded as one of the finest districts for the indigenous Nero d'Avola. The winemaker Tonino Guzzo was identified by Decanter magazine as one of Italy's promising stars.
