Story of the Wine:
Catarrato is the main white variety on Sicily and has been established since before records began. It is mainly grown in the south and western parts of Sicily. The Canicatti winery has recently been rebuilt and with its new winemaker is making wines of outstanding quality.

Area: From vineyards around the town of Canicatti in southern Sicily.
Training System: Espadrella
Harvest: Late September
Vinification: A criomaceration for several hours is followed by a cool fermentation at 120-160C for 20-30 days in cement vats. There is partial malolactic fermentation.
Ageing: Kept for 3 months in stainless steel vats.

This recently modernised co-operative has its vineyards in the south of Sicily around the town of Agrigento. This is regarded as one of the finest districts for the indigenous Nero d'Avola. The winemaker Tonino Guzzo was identified by Decanter magazine as one of Italy's promising stars.
